Ingredients

  • 1 can (16 oz.) black beans, rinsed and drained
  • 1 box (10 oz.) frozen whole kernel corn, thawed
  • 1 medium red bell pepper, chopped
  • 1 medium papaya, peeled and diced
  • 1/2 cup sliced green onions
  • 1/3 cup chopped fresh cilantro
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 2 Knorr® Chipotle MiniCube(s), crumbled

Directions

  1. Combine all ingredients in a large bowl. Serve with chips or with grilled meat, fish or poultry.
