Melt Country Crock® Spread in deep 12-inch skillet over medium heat and cook onion, stirring frequently, until tender, about 5 minutes. Stir in rice and habanero pepper and cook, stirring occasionally, until rice is golden, about 4 minutes.
Stir in water, coconut milk and Knorr® Reduced Sodium Chicken flavor Bouillon Cube. Bring to a boil over high heat. Stir in pineapple and mango. Reduce heat to low and simmer covered 18 minutes. Stir in shrimp and continue to cook 4 minutes until shrimp turn pink and rice is tender.
