  • 1 large ripe cantaloupe (about 3-1/2 lbs.), peeled and cubed (6 cups)
  • 1/2 cup orange juice
  • 2 Tbsp. fresh mint leaves
  • 1 Knorr® Cilantro MiniCube(s), crumbled
  • 1 cup plain yogurt o sour cream
  • 1 Knorr® Chipotle MiniCube(s), crumbled


  1. Process first 4 ingredients in blender, in batches, until smooth. Chill about 1 hour or until ready to serve.
  2. Meanwhile, combine remaining ingredients in a small bowl; chill until ready to serve. Serve chilled soup topped with chipotle mixture.
